Recommended Sake-Pairing Hatsumago Kimoto Tradition
This lukewarm starter impresses with its “simple” preparation and flavourful complexity. The special Arabica coffee with its fruitiness and citrus nuances enlivens it in a special way. Hence also a full-bodied sake, which with its 15% alcohol by volume is served somewhat warmer (approx. 15°C) in a universal wine glass. The slightly exotic and youthful character harmonises with the mild lake trout; the fine acidity loosens up the mushroom mocha cream on the palate. Mushroom dashi with coffee oil go hand in hand with this honjōzō's full-bodied flavour. The roasted wild cauliflower with cumeo pepper plays with the exotic fruit on the tongue. The long-lasting spiciness of the sake rounds everything off at the end, and once again captures the flavourful diversity of the coffee-infused dish with its fine sweetness.
